Guilt-Less Chicken & Waffles

If you follow me on instagram @mermaidfitnessbump or watch my stories, it’s clear that I am IN LOVE with Pamcakes Pancake mixes. And if you do not follow me, or missed what I’m talking about… Pamcakes are pancake mixes that are low in carbs, NO added sugar, high in protein, GF, and safe for the whole family!

Once I tried and fell in love with Pamcakes, there was one meal I knew I HAD to try right away… a healthier take on a southern favorite – Chicken and Waffles. The waffles part was easy. Just add water to the pancake mix and put in the waffle maker and bam! I used the pumpkin, but I imagine any flavor would taste great with this combo.

I found the following recipe for baked crispy chicken. It calls for brown rice cereal which I did not find at my local grocery store. So I subbed it for Chex Honey Nut flavored cereal, which I think really added to the dish.  I topped my chicken and waffle with coconut palm sugar.

As a side, we decided to make some collard greens. Collard greens usually take HOURS to cook and are sometimes made in chicken broth, boiled with bacon, or turkey, or what have you. But boiling the greens takes away a lot of the vitamins and I wanted this meal to be one that I didn’t have to feel guilty about scoffing down. Steaming the greens retains the vitamins and cooks them a lot quicker. My husband thought they were a little bitter, but I was addicted and couldn’t help but eat the leaves one by one out of the dish. It’s really a preference, I think. But I loved them! We did add some thick cut, cherrywood bacon afterwards, but that’s totally optional. You could either omit or do turkey bacon.
